The authors have studied the pulp density and storability of the apple winter cultivars fruits in the conditions of the usual cooled fruit store. The statistical analysis of the obtained results made it possible to recommend the optimum pulp density indices after the storage depending on the evs peculiarities and ripening terms. The groups with the low, medium and high density have been singled out. This indicator has appeared to enable when the apples are in the picking maturity to predict the duration of their storage.
