The authors elucidate the results of studying the problems of the long term storage and processing fruits and small fruits in Crimea. The storage regime and ability of apples, pears and stone fruits have been established which are cultivated in intense orchards taking into consideration soil, climatical and àgrotechnical conditions. The economic efficiency and advantages have been determined of the fruits storage in the regulated atmosphere.
